April: Halibut Kebabs and Asian Spices

For my 2018 calendar, I invited friends and colleagues to contribute their favorite FLAVOR combination, along with a recipe and a story. I received 12 great combos and I used the ingredients for my inspiration. This month was a tasty combo of halibut with Asian spices.

This recipe and flavor combo is from artist Patti McNutt, who I met through Carol Marine. Patti is delightful, funny, and always smiling a beautiful smile. Whenever I get a chance to be with her, I look forward to it.

This is one of my all-time favorite flavor combinations! Cooks, Pots, and Tabletops is a Eugene, OR-based kitchen store and cooking school (sadly, it recently closed) where I learned this recipe in cooking class in 1997. I still love it. —Patti McNutt,

Halibut Kebabs and Asian Spices

(This dish pairs beautifully with Pinot Gris.)


1/2 c. chopped cilantro

1 large garlic clove, minced

1 T. ginger, minced

1 jalapeño pepper, chopped

Grated rind of orange

3 T. orange juice

6 T. lime juice

2 T. soy sauce

2 T. olive oil

1 T. sesame oil


1 1/2 lbs. halibut, trimmed and cut into 1-1/2” pieces

1 large onion, cut into 1″ pieces

yellow, red and green bell peppers, cut into 1″ pieces

salt and pepper

avocado, sliced, for garnish

cilantro, for garnish

Combine cilantro, garlic, ginger, jalapeño, orange and half the lime juice, soy sauce, olive and sesame oils. Mix thoroughly.  Marinate kebabs for about two hours. Brush grill with vegetable oil. Grill 2-3 minutes per side, brushing with remaining marinade. Do not overcook. Remove from skewers and place on plates with avocado slices and cilantro. Serve with jasmine rice.
